I believe I have learnt enough about networking and system internals to make some malware. But what should I get it to do? Preferably something simple at the moment but then maybe leave suggestions for future projects.

Mainly python, c++ and c#. Powershell have been improving on as that seems to be used a lot in lnk malware and other types. Been using python to learn flask.

Python's dev could easily earn about 600€ a day on malt, why do you want create malware ?

because it makes more fun, probably...havent done that myself..but look at a target domain first, maybe?
