Hmm... Cowboy Bebop is a classic one. I surely recommend it.
Some sci-fi themes in a generic space frame, with pretty descent character back stories. It pretty short (26 eps, I guess).

It's actually pretty good to watch! :) although i recommend reading manga first :)
