is it not mostly complicated to set this type of configuration up? It's not cost friendly either ?

Most of these email solutions come with Docker containers that you can spin up. Go and buy a server for real cheap, $5 or so, and then set one of these email solutions up and you are away. You can create as many inboxes with different emails as you would like and not have to worry about who is keeping logs.

When I tried to create an anonymous proton mail account over Tor (not when not using Tor), I had to provide another E-Mail. Is there any way you know to circumvent this?

It's not exactly what you asked for, but have you considered i2pmail? Basically, they've got 2 servers - on the clearnet(i2pmail.org) and inside i2p(mail.i2p). Those are connected together through i2p, "dark web" server is theoretically never exposed. Clearnet server can receive emails from clearnet, and send them to dark web server. And you check your mailbox through i2p as well. Good enough anonymity?
